Sourdough bread

Ingredients

  • 4 cups bread flour
  • 3 tablespoons white sugar
  • 2 1/2 teaspoons salt
  • 1 (.25 ounce) package active dry yeast
  • 1 cup warm milk
  • 2 tablespoons butter, softened
  • 1 1/2 cups sourdough starter
  • egg, separated
 Directions
1. In a large bowl, combine 1 cup flour, sugar, salt, and dry yeast. Add warmed milk and softened butter. Stir in your awesome sourdough starter.
2. Mix in up to 3 cups of flour, gradually.
3. Turn dough out onto a floured surface, and knead for 8 to 10 minutes. To do this you pull the bread apart with the heel of your hand and then fold it back in on itself (see the slideshow below).

4. Place dough in a greased bowl, turn once to oil surface of dough, and cover. Allow to rise for 1 hour, or until doubled in volume.

5. Punch down, and let rest for 15 minutes. Shape into loaves. Place on a greased baking pan. Allow to rise for 1 hour

6. Brush with egg whites (not the yolk)

7. Bake at 190 degrees C for 30 minutes, or until done.
